Cherished Cauliflower Soup
This three-ingredient soup is very low in calories, yet, very high in taste. Make your guests guess what they are eating before telling them. They still may not believe you.
Ingredients:
1 large head cauliflower
Water
Chicken or vegetable broth
Dash of paprika (optional)
Sprinkle of dried parsley (optional)
Directions:
Rinse and cut up cauliflower head into flowerets.
Place in pot with enough water to just barely cover flowerets.
Bring to boil, turn down to low boil, and slow boil flowerets for 8-10 minutes.
Drain pot, reserving the water to use as needed.
Place small batches of flowerets into food blender with a little of the reserved water, adding more as needed.
Blend until smooth, remove, and add more flowerets until all are blended smooth with as much of the broth as needed.
Return to pot and reheat until just below a boil.
Serve with a sprinkle of paprika and dried parsley on top (optional).
Note: This can be turned into a light main dish by adding additional vegetables, pasta, and cooked chicken or fish.
